An egg is the reproductive unit of the animal. There are many animals that lay eggs and produce their offspring like hen, duck, pigeon, lizard, snake. Different animals produce discrete  kind of eggs that is why we have distinct variety of eggs. They are different in structure some are small and some large, unlike in nutrient composition, difference in color some are white, some are brown, and some are blue and green. The white and brown eggs are common but blue and green eggs are rare one.

History related to the EGGS?

There are different breed of chickens which produce blue and green eggs. In the era of  between 200 to 500 year ago, some studies stated that retrovirus was responsible for the cause of mutation in the egg and produce the first ever blue egg in the so-called Mapuche hen of South America and its descendants of Europe. This effect was due to the accumulation of a pigment called Biliverdin in the egg shell. These eggs are different from others because they consist of large yolk and having hard shell. These eggs are commonly used by the athletes because they do not produce cholesterol. Also they are rich in DHA(a polyunsaturated fatty acid) because mapuche people fed their chickens with a special type of algae  so they are a good source of protein, minerals and essential vitamins. 

Stories, Myths in the past?

Earlier it there was some myth about regarding green eggs, that they only exist in the Sam-I-Am story in which he tells the narrator different location and dinning partners to try the delicacy, but at the narrator eats the eggs and he found them very delicious, they seems rare and unusual, but they are exist in the world. There are so many species which lay green eggs like, gray catbirds, common ravens, American crows, common starlings, mute swans and many more. 

Different kind of egg shell doesn’t affect the nutritive value, and the color of the eggshell help us to determines the genetics of the new born species. 

Now let’s talk about some different kind of species: Both the species are known for producing blue and green eggs but they are not same, the difference between both the species is that Ameraucanas have beards and muffs, and Araucanas have ear tufts. While Ameraucanas are more common in United states than Araucanas. But if you are in market then you will find there is no such breed available in market.

 And it is also state that the Easter Eggers and Ameraucanas both are same breed but it is not true Easters Eggers are mix of different breeds with one parent carrying a blue egg-laying gene.  Easter Egg club is the most popular chicken in America can lay a rainbow of egg colors including blue and green.

Benefits of eating blue and green eggs: The health benefits of blue and green eggs are as follow:

They are rich in protein, the protein content in about 13%.

They contain a good amount of fat% which is easily digestible by humans. The percentage is 9.1%

They are also rich in the many minerals like iron, sulfur, and phosphorus, etc. the percentage of mineral content is 12.2%

They are also rich in various vitamins such as vitamin A,D,B1& B2.

It also contains the carotenoid pigment, which are very beneficial for our eyes.

In the kitchen, they are used for various recipes, from salad to desserts, as they are very rich in various nutrients so they are ideal for athletes and people who do gym and exercise.

They are considered as the most delicious chicken eggs to prepare different meals with a large number of benefits for children who are at developing stage, for maintaining the health of young people and adults.

These eggs are very common in other countries but in India, very few people know about these eggs and eaten by people. 

CASE STUDY: In kerala, people found six hens in the same poultry farm that lay eggs with green yolks. At present various studies and researches are going on these special hens and the eggs. 

CONCLUSION: After so many studies and discussion on the blue and green eggs, its concluded that they exist in the real world and people consume them in different countries and considered as the most delicious chicken eggs. Because they contain very health and nutritional components which are beneficial for both children who are at developing stage and the young & adult generation and many delicious dishes can prepare by them.
